Water can be used to produce electricity for some homes. If a drought were to hit them, they would be out of power and would not know how long it would be for. We also use water for simple everyday life activities such as ; washing your dishes, going to the bathroom (plumbing), taking baths, staying hydrated, and cooking.
When the water supply drops that means less crops and food full of nutrients for us and animals. The prices for these kinds of food will go up. There is also lots of good farmland in the prairies, it's flat making it easier to harvest but, with all the droughts that area gets hit with, the crops aren't able to produce as well.

However the farmers could use the money they didn't use to buy a tractor to hire a person to drill irrigation wells, the well-drilling business would make more money.
